Eligibility and scope

Who and what may enter

Select the 2027 autumn or spring evaluation. Beverage and food registration deadlines are managed separately.

Limits and exclusions

The entry must meet the selected edition, category, eligibility and intellectual-property requirements.

Official entry instructions

Physical samples required

Confirm the applicable stage, quantity, specification, receiving address and route before dispatch. Use the current official notice; an organiser’s office address is not automatically a sample warehouse.

Sample instructions 1

Quantity and specification: Enough food for 24 portions; water, beer and soft drinks: twelve small bottles (25–33 cl) or six large bottles (0.5–1 L); tea/coffee: 24 portions; spirits: three bottles (0.75–1 L).
Delivery: Official contacts specify receiving locations by category and origin. Use the relevant route's arrival deadline, not dispatch. The organiser warns clearance can take up to 15 days. Mark each sample with its Product Reference ID.
Costs and responsibilities: Entrants pay freight, tax, import and clearance under DDP. Costs charged to the organiser will be recharged to the entrant.
Return and retention: The official instructions identify samples as analytical samples to be completely destroyed after analysis; do not plan them as returnable.

寄样要求：需要提供足够品鉴的样品

适用阶段：按食品或饮品、秋季或春季赛道报名，再按联系人通知送样。

数量与规格：食品足够制作24份；水、啤酒及软饮料为12小瓶（25–33cl）或6大瓶（0.5–1L）；茶与咖啡为24份；烈酒3瓶（0.75–1L）。

交付时间与地点：收件地点按品类和产地由官方联系人通知。到样截止见本届对应赛道，不以寄出时间替代；官方提示清关可能需要最多15天。每件样品标注产品Reference ID。

费用由谁承担：参评者承担运费、税费、进口和清关费，采用DDP完税交货。若这些支出被收至主办方，官方会再向参评者收取。

退样与处置：官方寄样说明将样品标为分析用并在分析后完全销毁，不应按可退还样品安排。

适用范围：2027届及所列现行官方规则；后续届次重新核对。

Assessment and recognition

How entries are assessed

Professional chefs and sommeliers assess appearance, aroma, taste, finish and texture.

Recognition and permitted use

Qualifying products receive the corresponding star result and a three-year mark licence, subject to accepting the licence agreement.
